Turkey Meatloaf

Total Time: 1 hour Serves: 4-6

INGREDIENTS

  • Coconut oil
  • ½ cup Mary’s Gone
  • Crackers crumbs, crushed
  • ½ cup sun-dried tomatoes
  • ½ cup goat cheese (chèvre)
  • ⅓ cup chopped fresh
  • parsley
  • 2 eggs
  • 2 tablespoons coconut milk
  • 2 cloves garlic, minced
  • 2 teaspoons sea salt
  • 1 teaspoon pepper
  • 1 pound ground turkey

 

DIRECTIONS

1 Preheat the oven to 375
degrees F. Grease a
9 x 5-inch loaf pan with

the coconut oil.

2 In a large bowl, combine
the cracker crumbs,
tomatoes, cheese, parsley,
eggs, coconut milk, garlic,
salt and pepper. Add the
turkey and mix well.

3 Pack the mixture into the
prepared pan and bake
until cooked through and
no longer pink, about 45
minutes.
