Butternut Squash Hash – Recipe

Butternut Squash & Beet Hash

Total Time: 45 minutes Serves: 2-4

1 cup peeled and cubed
butternut squash
1 large beet, peeled and
1 tablespoon coconut oil,
Sea salt and pepper
1 cup diced turkey or
6 slices turkey bacon
1 onion, diced

1 Preheat the oven to 400
degrees F.
2 On a baking sheet, toss
the squash and beet with
the coconut oil and season
with the salt and pepper.
Spread in a single layer
and roast until golden
brown and tender, 25–30

3 In a skillet over medium
heat, cook the turkey
bacon (if using) until
crispy. Add the onion and
season with the salt. Cook,
stirring occasionally, until
the onions caramelize. Stir
in the roasted vegetables.
